No, that is not Velveeta. It’s Roasted Red Pepper Cashew Sauce with some nutritional yeast blended in for a protein and a cheezy boost. Welcome to episode 4 of Weird Meal Wednesdays. This is where I show you examples of healthful meals that are a bit out of the ordinary. Ok, not to me. But probably to you! If there is one thing I hear over and over again it’s got to be “What can I eat? or “What should I eat?” I can’t tell you what to eat. You need to feed your body according to what it needs and likes. But I do hope to open the door to few potential new ideas that you may not have thought of.
Here’s a breakdown of today’s meal:
- leftover baked sweet potato from yesterday
- steamed broccoli, mushroom cap and shallots
- roasted red pepper sauce
- chocolate quinoa brownie (made earlier– skipped the peanut butter frosting and made a coconut butter chocolate one instead)
And that’s it. Hem, alright so I had a couple more brownie squares with a soy cappuccino too. What can I say, I’m honest.
Although I may not be writing as many blog posts, I’m still keeping up with all the current nutrition news! Did you see the article about meat allergies and ticks? Apparently there has been a sudden onset of meat allergies, mostly in Virginia. The theory is that a bite from a lone star tick can trigger an allergic reaction to meat– symptoms ranging from hives to anaphylactic shock.
