I had all the ingredients except for the pepper and the cilantro and it came out so fabulous that I wanted to share it in hopes that it will inspire others to give it a try. It tasted so nourishing and I know you will love it too. Most likely you have lentils, cans of tomatoes, an onion and chili powder in your house. Feel free to modify it as you want to your liking. I added some red chili pepper flakes for extra heat and ate a big bowlful over leftover quinoa and cut up sweet potato and topped it with a creamy dollop of guacamole. Easy. Healthy. Delicious. And there is plenty for leftovers for the next couple of days.
