Brownie Bites with Cocoa-Coconut Cream Frosting

Just in time to make for a chocolatey Valentine’s Day.  Pictured above, the brownies are formed into bite-sized cookies with a dollop of frosting and a few cocoa nibs.  As seen below, the brownie is shaped into an individual square on a plate and frosted.  You can also press the brownie dough into a glass pan and spread with frosting.

 

Brownie Base

  • 1 cup walnuts
  • 1 cup pitted dates
  • 1/4 cup cocoa powder (can use carob or half and half)
  • 1 teaspoon vanilla extract
  • sea salt to taste

Blend all ingredients in a food processor until well incorporated.                                      Shape into cookies, brownie squares or press into a small pan.

Cocoa-Coconut Cream Frosting

  • 1 cup coconut cream (this is the thick cream on the top of a can of coconut milk– don’t shake or stir in the bottom liquid.  Some brands will separate on their own while others will separate when chilled in the fridge for a few hours.  My can yielded about one cup)
  • 1 cup pitted dates
  • 1/3 cup cocoa powder (or carob)
  • 1 teaspoon vanilla extract
  • sea salt to taste

Blend all ingredients in a high-speed blender until smooth.  Let the frosting sit in the fridge a few hours to firm up and then frost brownies or get fancy and use a cake decorating tool.  Sprinkle on a few cocoa nibs for crunch and decoration.
